Bikini Recipe
Yields 10 servings
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Combine all the ingredients in a pot, heat until it reaches a light boil, stirring until the sugar dissolves. After that, take off the heat allowing it to cool completely. Transfer to a sealable bottle, cap it and store chilled, it can be stored for around a month.
Preparing the Batch Mix: Pour the specified spirits and syrup into a sizeable container, allow it to infuse for 60 minutes, then filter it best through a fine cloth, so it's fully clarified.
For serving: Measure 85ml of your batch mix into your cocktail shaker packed with ice, and stir gently for a minute until cold. Strain into a cold coupe glass or similar, top with the cranberries and finish with a light spray with the mandarin essence over the top.
